  • 4 fillets cod about 6 oz each
  • 2 tbsp olive oil for drizzling
  • 3 tbsp butter melted
  • 1 lemon juice freshly squeezed
  • 1 tsp lemon zest optional
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pat the cod fillets dry with paper towels and place them on a baking sheet lined with parchment paper.
  • Drizzle olive oil over the fillets and season with salt and pepper.
  • In a small bowl, combine melted butter, lemon juice, and lemon zest.
  • Pour the lemon butter mixture evenly over the cod fillets.
  • Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
  • Remove from oven and let rest for 2 minutes before serving.
  • Garnish with additional lemon slices or fresh herbs if desired.
