Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 lb chicken thighs boneless, skinless, cut into chunks
  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated
  • 1 tbsp dill chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup cooked rice

Instructions
 

  • In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken chunks and marinate for at least 30 minutes.
  • Preheat a grill or grill pan over medium-high heat. Cook chicken for 4-5 minutes per side, until charred and cooked through.
  • In a separate bowl, mix Greek yogurt, grated cucumber, dill, salt, and a splash of lemon juice for the tzatziki sauce.
  • Assemble bowls with cooked rice, grilled chicken, sliced cucumber, and cherry tomatoes. Drizzle with tzatziki sauce.
