- 2 tbsp olive oil for browning
- 1.5 lb beef stew meat cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots sliced
- 3 medium potatoes cubed
- 1 large onion chopped
- 3 cloves garlic minced
- 1 tsp dried thyme
- 1 tsp salt adjust to taste
- 0.5 tsp black pepper freshly ground
Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides.
Transfer browned beef to slow cooker.
Add beef broth, carrots, potatoes, onion, and garlic to the slow cooker.
Stir in thyme, salt, and pepper.
Cover and cook on low for 8 hours or until beef is tender.
