Ingredients
  

  • 2 tbsp olive oil for browning
  • 1.5 lb beef stew meat cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots sliced
  • 3 medium potatoes cubed
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper freshly ground

Instructions
 

  • Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides.
  • Transfer browned beef to slow cooker.
  • Add beef broth, carrots, potatoes, onion, and garlic to the slow cooker.
  • Stir in thyme, salt, and pepper.
  • Cover and cook on low for 8 hours or until beef is tender.
  • Check seasoning and adjust if necessary.
  • If desired, thicken stew with cornstarch slurry.
  • Serve hot and enjoy.
