  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together to ensure even distribution of the dry ingredients, which helps prevent clumps in the batter.
  • In a separate bowl, combine the water, olive oil, and vanilla extract. Stir the mixture thoroughly until it becomes a smooth, consistent liquid. Ensure there are no visible streaks of oil or vanilla, as this will form the liquid base for your pancake batter, ensuring even texture and flavor distribution.
  • Combine the wet ingredients with the dry mixture by pouring them together. Stir gently until the mixture is just combined, ensuring the batter remains slightly lumpy. Avoid overmixing, as this can result in pancakes that are too dense. The batter should have a few small lumps, indicating it is ready for cooking.
  • Heat a large skillet over medium heat. Add a small amount of olive oil, swirling to coat the pan evenly. The oil should shimmer, indicating it's hot enough for cooking.
  • Pour 1/4 cup of batter onto the preheated skillet for each pancake. Cook over medium heat until bubbles appear across the surface and the edges begin to firm up, approximately 2-3 minutes. The pancakes should be golden brown underneath before flipping.
  • Gently flip the pancakes using a spatula to avoid breaking them. Continue cooking for an additional 2-3 minutes over medium heat. Look for a golden brown color on the underside, indicating they are fully cooked. The pancakes should feel firm to the touch and release easily from the pan.
  • Once each pancake is golden brown and cooked through, transfer it to a plate that has been warmed in the oven. Cover the pancakes with a clean kitchen towel to maintain their warmth while you continue cooking the rest of the batter. This prevents them from cooling too quickly.
