Chicken Marinade
- 2 tbsp olive oil extra virgin
- 1 tbsp lemon juice freshly squeezed
- 2 cloves garlic minced
- 1 tsp oregano dried
- 1/2 tsp salt
- 1/4 tsp black pepper
Bowl Components
- 1 lb chicken breast boneless, skinless
- 1 cup rice uncooked, long-grain
- 1 cucumber diced
- 1 tomato diced
- 1/4 cup red onion sliced
- 1/4 cup feta cheese crumbled
- 1/4 cup Greek yogurt
Marinate and Cook Chicken
Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken, coating well. Marinate for 30 minutes.
