Ingredients
  

Chicken Marinade

  • 2 tbsp olive oil extra virgin
  • 1 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp oregano dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Bowl Components

  • 1 lb chicken breast boneless, skinless
  • 1 cup rice uncooked, long-grain
  • 1 cucumber diced
  • 1 tomato diced
  • 1/4 cup red onion sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup Greek yogurt

Instructions
 

Marinate and Cook Chicken

  • Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken, coating well. Marinate for 30 minutes.
  • Heat a grill pan over medium-high heat. Grill chicken for 6-7 minutes per side until charred and cooked through.

Prepare Rice and Vegetables

  • Cook rice according to package instructions. Fluff with a fork and set aside.
  • Dice cucumber and tomato. Slice red onion thinly. Set vegetables aside for assembly.

Assemble the Bowl

  • Slice grilled chicken into strips. Arrange rice in bowls, topped with chicken, vegetables, and feta.
  • Drizzle Greek yogurt over the top. Garnish with additional herbs, if desired.
