Ingredients
  

  • 2 tbsp olive oil
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can chickpeas drained and rinsed
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tahini
  • 1 lemon juice freshly squeezed
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp water for dressing

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the rinsed quinoa and toast for 2-3 minutes, stirring frequently, until you hear a popping sound and the grains become fragrant.
  • Pour in 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes until the quinoa absorbs the water and becomes tender. Fluff with a fork and set aside.
  • In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the drained chickpeas, ground cumin, salt, and black pepper. Cook, stirring occasionally, until the chickpeas are golden and slightly crisp, about 5-7 minutes.
  • While the chickpeas cook, prepare the dressing. In a small bowl, whisk together tahini, lemon juice, and 2 tablespoons of water until smooth. Adjust the consistency with additional water if needed.
  • Combine the cooked quinoa and chickpeas in a large mixing bowl. Add the chopped parsley and cilantro, tossing gently to mix. The herbs should release a fresh aroma as they are stirred in.
  • Drizzle the lemon-tahini dressing over the quinoa and chickpea mixture. Toss until everything is evenly coated, ensuring the dressing clings to each grain and chickpea.
  • Taste and adjust seasoning with more salt or lemon juice if desired. The flavors should be balanced, with a slight tang from the lemon.
  • Transfer the cooked quinoa and chickpeas to a serving dish. Ensure the quinoa is light and fluffy, while the chickpeas maintain a slight crunch. Serve immediately while warm, or allow to cool slightly for a room temperature option. This texture contrast enhances the overall enjoyment of the meal.
