Ingredients

  • 2 tbsp olive oil for cooking
  • 1 lb ground beef preferably lean
  • 3 tbsp soy sauce low-sodium recommended
  • 2 tbsp brown sugar packed
  • 1 tbsp sesame oil for flavor
  • 3 cloves garlic minced
  • 1 tsp ginger freshly grated
  • 1 cup short-grain rice cooked
  • 2 cups spinach fresh, roughly chopped
  • 1 tbsp sesame seeds toasted
  • 1 tsp rice vinegar optional, for balance

Instructions

  • Heat olive oil in a large skillet over medium-high heat until shimmering. Add ground beef, breaking it apart with a spatula. Cook until browned and crispy, about 5-7 minutes.
  • Drain excess fat from the skillet. Stir in minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  • Add soy sauce, brown sugar, and sesame oil to the beef. Stir well to coat and cook for another 2-3 minutes until the mixture is glossy and slightly thickened.
  • Cook rice according to package instructions. Keep warm and set aside.
  • Incorporate rice vinegar into the beef mixture for a touch of acidity, if desired. Stir in fresh spinach, allowing it to wilt slightly, about 1-2 minutes.
  • Divide cooked rice among bowls. Top with the beef mixture, ensuring even distribution of sauce and spinach.
  • Sprinkle toasted sesame seeds over the beef bowls for added texture and flavor.
  • Serve immediately, enjoying the contrast of the warm beef and rice with the fresh spinach.

Notes

Ensure toasting sesame seeds until golden for maximum flavor. Adjust seasoning based on personal preference.
