Ingredients

  • 2 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • 4 cloves garlic minced
  • 1 cup dry white wine
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 cup butter unsalted
  • 12 oz linguine cooked al dente
  • 1/4 cup parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup pasta water reserved from cooking

Instructions

  • Heat olive oil in a large skillet over medium heat. Add shrimp in a single layer, cooking until they turn pink and opaque, about 2-3 minutes per side. Remove and set aside.
  • In the same skillet, add the minced garlic over medium heat. Stir continuously to ensure even cooking, allowing the garlic to release its aroma and turn a light golden color, approximately 1 minute. Adjust the heat to prevent any burning, ensuring the garlic remains fragrant and not overly browned.
  • Add the dry white wine to the skillet, using a wooden spoon to loosen any caramelized bits stuck to the bottom. Allow the wine to simmer gently over medium heat for 2-3 minutes, reducing slightly. This process will concentrate the flavors, creating a more robust sauce.
  • Add the lemon juice and butter to the pan, stirring continuously over medium heat until the butter is fully melted. As the butter melts, the sauce will start to thicken and develop a glossy sheen. Ensure the sauce is smooth and well-combined, with a slight thickening to coat the back of a spoon.
  • Place the shrimp back into the skillet, stirring them gently to ensure they are evenly coated with the sauce. Continue cooking over medium heat for another minute, allowing the shrimp to absorb the flavors and become thoroughly warmed. Watch for the shrimp to turn opaque and pink, indicating they are perfectly heated.
  • Transfer the cooked linguine into the skillet, pouring in the reserved pasta water. Stir the mixture over medium heat, ensuring the pasta is well-coated and absorbs the sauce. Continue tossing until the linguine is glossy and the liquid has reduced slightly, creating a cohesive dish.
  • Sprinkle salt and black pepper over the shrimp and linguine, ensuring even distribution. Taste and adjust the seasoning as needed, aiming for a balanced flavor profile. The salt should subtly enhance the dish, while the pepper adds a gentle warmth without overwhelming the other ingredients. Stir well to combine.
  • Once the pasta is plated, evenly distribute the finely chopped parsley over the top. This will introduce a vibrant green color and a fresh aroma, enhancing the overall presentation. The parsley's subtle herbal flavor will balance the richness of the sauce, providing a refreshing contrast. Ensure the parsley is spread uniformly to achieve a consistent taste in every bite.
  • Gently toss the cooked linguine and shrimp together in the pan over medium heat, ensuring the shrimp are evenly distributed among the pasta strands. Stir carefully to coat everything with the sauce, allowing the flavors to meld. Look for the shrimp to be pink and opaque, indicating they are perfectly cooked. Avoid overmixing to prevent breaking the shrimp.
  • Transfer the shrimp scampi linguine to a serving platter while still hot. Sprinkle with freshly chopped parsley for a vibrant touch. The pasta should be al dente, and the shrimp tender. Serve immediately to maintain the dish's warmth and aroma, enhancing the overall dining experience.

Notes

For best results, use fresh lemon juice, as bottled juice can alter the flavor profile. If the sauce is too thin, simmer for a few extra minutes to thicken.
