  • 2 tbsp olive oil divided
  • 1 lb medium shrimp peeled and deveined
  • 3 cups cooked rice preferably day-old
  • 2 tbsp soy sauce or to taste
  • 3 green onions sliced
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots thawed

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque.
  • Remove shrimp from skillet and set aside.
  • In the same skillet, add remaining olive oil and minced garlic. Sauté until fragrant, about 30 seconds.
  • Add thawed peas and carrots, and stir-fry for 2 minutes.
  • Stir in cooked rice, breaking up any clumps with a spatula.
  • Drizzle soy sauce over the rice and mix thoroughly.
  • Return shrimp to the skillet, toss to combine, and cook for another 2 minutes.
  • Garnish with sliced green onions before serving.

Notes

Ensure rice is cold to prevent sticking. Adjust seasoning as needed.
