Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup dry pasta such as penne or fusilli
  • 1 cup water
  • 1 tsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup Parmesan cheese grated
  • 1 tbsp fresh parsley chopped, for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until it turns pale gold, releasing a nutty aroma. Be careful not to let it burn, which would impart a bitter taste.
  • Add halved cherry tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until they soften and begin to break down, releasing their natural juices and creating a base for the sauce.
  • Stir in dry pasta, ensuring it is well coated with the tomato mixture. This step helps the pasta absorb the flavors as it cooks, enhancing the overall taste of the dish.
  • Pour in water and add dried basil, salt, and black pepper. Stir to combine, then bring to a simmer. Cover the skillet and cook for 10-12 minutes, stirring occasionally to prevent sticking.
  • Check the pasta for doneness by tasting a piece. It should be al dente, with a slight bite. If undercooked, add a bit more water and continue cooking until the desired texture is reached.
  • Once the pasta is cooked, remove the lid and increase the heat slightly to allow any excess liquid to evaporate. Stir frequently to prevent the pasta from sticking to the skillet.
  • Lower the heat to a gentle simmer and incorporate the grated Parmesan cheese, stirring continuously. Allow the cheese to melt slowly, blending smoothly into the sauce. This will result in a creamy consistency that adheres to the pasta, ensuring each strand is evenly coated and rich in texture.
  • Taste and adjust seasoning with additional salt and pepper if needed. The flavors should be balanced, with a hint of sweetness from the tomatoes and a savory depth from the cheese.
  • Take the skillet off the heat and allow it to rest for one minute. This pause helps the ingredients integrate, enhancing the overall texture and aroma. The brief resting time ensures the pasta absorbs the sauce, resulting in a cohesive dish with balanced flavors.
  • Sprinkle chopped fresh parsley over the pasta just before serving. This final touch introduces a bright, herbal aroma and a pop of green color, enhancing the dish's visual appeal. The parsley's crisp texture and subtle flavor provide a refreshing contrast to the pasta, balancing the overall taste and presentation.

Notes

Ensure the skillet is large enough to accommodate the pasta and sauce comfortably. If the pasta sticks, add a splash of water and stir gently. Adjust the seasoning after the cheese is added, as it contributes saltiness.
