Ingredients
  

  • 2 tbsp olive oil divided
  • 4 pieces chicken breast boneless, skinless
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

  • In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, oregano, and thyme. Pat chicken breasts dry with paper towels and season both sides with the spice mixture, pressing gently to adhere.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and sear for 5-6 minutes on each side, or until a deep golden crust forms.
  • Lower the heat to medium and pour in the remaining tablespoon of olive oil, ensuring it coats the skillet evenly. This step helps prevent the spices from scorching, allowing the chicken to cook uniformly and develop a golden-brown crust without burning.
  • Place the lid on the skillet and continue cooking over medium heat for an additional 5 minutes. This allows the chicken breast to reach a safe internal temperature while maintaining its juiciness. The steam created inside the skillet will help ensure the chicken remains tender and moist, preventing it from becoming dry.
  • Check the internal temperature of the chicken with an instant-read thermometer. It should read 165 F (74 C) in the thickest part. If not, cook for another 2 minutes and recheck.
  • Transfer the chicken breast from the skillet to a cutting board, allowing it to rest for 5 minutes. This resting period helps the juices redistribute evenly throughout the meat, resulting in a more tender texture. Avoid cutting too soon to prevent losing moisture, ensuring a juicy final dish.
  • As the chicken rests, pour lemon juice into the skillet over medium heat. Use a spatula to scrape up any browned bits, allowing them to dissolve into the liquid. Stir continuously until the mixture reduces slightly, forming a tangy sauce. Drizzle this over the chicken before serving.
  • Begin by slicing the chicken breasts against the grain into even pieces. This method helps keep the slices tender and easy to chew. Aim for slices about half an inch thick, ensuring they retain their moisture and texture. Notice the smooth, clean cuts that result from this technique.
  • Arrange the sliced chicken breast on a serving platter, ensuring even distribution. Generously drizzle the pan sauce over the chicken, allowing it to seep into the slices. Notes

Ensure the skillet is hot before adding the chicken to prevent sticking. If the chicken sticks, let it cook a little longer before attempting to flip it. This allows the crust to form and release naturally.
